Observation: Working containers of spices and herbs on prep line unlabeled. All working containers containing spices, oils, or herbs must be labeled with proper name of its contents if not in the original container.
- Drying mops
Observation: Mop stored in mop sink. All mops must be hung to air dry when not in use.
- Cleanability of floors, walls, and ceilings
Observation: Open holes observed in wall under front hand washing sink around drain pipes and clean out cap. All surfaces must be smooth easily cleanable. Cover holes to make easily cleanable and to prevent rodent infestation.
- Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
Observation: Vent covers over the walk in cooler and freezer are soiled. All the physical facility must be clean to sight and touch. Clean as often as necessary to keep clean.

1) Food slicer has small area of dried food particles, clean. 2) Has two cambro containers and two lids that are cracked and no longer cleanable, will discard now.

One staff with a wrist watch on, must remove all wrist jewelry when working with foods.

Has cambro containers stacked with some water droplets, must allow to fully air dry before stacking.
- Drying mops
Has wet mop in bottom of mop sink, must position mop to allow to air dry between uses, such as on hook or draped over the bucket.
