Observation: R2 cooler unit was out of service. Work order given by management to department and is to be repaired. All equipment not in use must be repaired or removed from the premises.
- When to wash
Observation: Employees observed dawning gloves without first washing hands. Must wash hands prior to dawning gloves. Addressed with staff and management will take measures to educate remaining staff on when to wash.

Observation: Cheese in plastic container near soups was temped at 56*F. Cheese was on ice. Cheese was discarded at time of inspection. Corrected on site.
- Cutting surfaces maintained
Observation: Green cutting board was showing light staining. Cutting surfaces must be maintained to allow for clean-ability. Resurface or discard.
- Handwashing cleanser, availability
Observation: No soap available at hand sink near salad prep area. Must provide handwashing cleanser at all handwashing sinks.

Observation:Pizza prep cooler had been opened for stocking, but underneath stored eggs were at 45 degrees F, will discard now. Monitor cooler closely to ensure is holding all PHF's at 41 degrees or less.
- Food on display is protected from contamination by consumers
Observation:Cover the condiments and fish taco ingredients on serving line, to protect from contamination as customers pass along the line ,ie lids, or food wrap.

Crushed ice machine chute edge has small amount of buildup on chute edge, far left side, clean and sanitize at least onec monthly and more frequently if buildup noted.
