4-302.14 - --There were no chlorine sanitizer test strips available. Repeated KDA_2_30114H - --A cook handled money with her gloved hands, removed the gloves, donned new gloves, then handled a ready to eat tortilla. The cook did not wash her hands after handling money or before donning new gloves. "Corrected on site" (COS-educated). Repeated KDA_3_30111B - --When the inspector arrived on site an employee removed ready to eat tortillas from the grill with her bare hands then served the tortillas to a customer. Repeated KDA_3_30211A1a - --A carton of raw shell eggs were stored over a head of lettuce and a can of Dr. Pepper in the reach in cooler. (COS-separated). Repeated KDA_3_50116A1 - --Setting at room temperature on top of the hand washing sink: ready to eat refried beans 121 F. The beans had been cooked 3 1/2 hours prior and then sat at room temperature, as per employee. (COS-placed on grill and reheated to 165 F). Repeated KDA_3_50116A2 - --Setting at room temperature on the east prep table: sliced tomatoes 56 F. The tomatoes had been sliced and setting at room temperature for one hour, as per employee. Setting on the floor under the grill: ready to eat beans 56 F. The beans were removed from the cooler to set at room temperature one hour prior, as per employee. (COS-tomatoes were placed on ice and the beans were placed in the freezer). KDA_3_50118A2 - --A container of ready to eat shredded beef and a container of cut cantaloupe was held in the reach in cooler four days with no consume by date label, as per employee. (COS-dated) KDA_3_70111D - --An employee handled ready to eat tortillas with her bare hands and did not discard the tortillas. KDA_4_10111A - --Whole potatoes were stored in a five gallon bucket that had dried cement on the interior of the bucket. (COS-removed from the trailer). KDA_4_204112E - --There was not a thermometer available to measure internal food temperatures (cold and hot). The available thermometer was scaled from 120 F to 220 F and the stem of the thermometer was broke. Repeated. KDA_4_50119 - --The maximum water temperature at the 3-vat sink was 55 F. The plumber arrived on site, but after 45 minutes the water was not hot. KDA_5_10311B - --The facility was open and operating with no hot water available at any of the fixtures in the trailer. The maximum water temperature was 55 F. A plumber arrived on site and replaced the heating element, but after 45 minutes the water was not hot. KDA_5_20212A - --The maximum water temperature at the hand washing sink was 55 F. KDA_5_20511B - --A cutting board was setting on top of the hand washing sink in the trailers with a pan of refried beans and drinking cups setting on the cutting board. (COS-items were removed from the sink). KDA_5_20515B - --There was excess amounts of standing water under and around the trailer. The employee stated that the drain line from the trailer had been leaking. KDA_6_50111 - --The paper covering on the ceiling was peeling on the north side of the trailer over the warewashing sinks.
