. Facility has yet to operate this year. Variance Request was filled out today and approved. Facility did just fire three workers. Two people were concessions employees. Complaint is closed. Complaint #15-0089.

Note: This is the last race of the season, discussed ensuring that the unit is cleaned and sanitized and all foods removed in order to ensure that no pests are attracted to it.  In addition, discussed cleaning and sanitizing prior to use for next season.

Chlorine bleach is the sanitizer used in the establishment.

Cheese and chili were being warmed in a roaster.  Not yet to temperature.

Simmons portable toilets provides service to the pit areas.

    There are various drawers that have unsealed wooden paneling.
    Seal, paint or otherwise repair the wood to ensure it is properly sealed.
    Equipment, utensils, and single-service articles shall not impart odors, color, or taste, nor contribute to the contamination of food.
    Multi-use equipment and utensils shall be made and repaired with safe, non-toxic materials, including finishing materials that is corrosion resistant, non-absorbent, smooth, easily cleanable, and durable under conditions of normal use.

    Sewage discharge piping was not connected to the sanitary district discharge and water was seen coming from the connection to the trailer.

    The restroom doors (outdoors) do not have tightened self closing mechanisms.
    Tighten the hinges to ensure that doors to the restroom are self closing.
    Toilet rooms shall be completely enclosed and shall have tight fitting, self-closing doors.

This establishment has been given final approval to operate under the guidelines of Chapter 10, Food Safety, of the Peoria County Code.

A plumbing inspection has been requested.  A backflow prevention device may be required on the water hose after the splitter.  A grease trap may also be required.
