- [5] Source sound condition; no spoilage
Contact said they were packaging the beef and meat is being cut off site. THIS INSPECTION IS SERVING AS A CEASE AND DESIST; THERE IS NO CUTTING OF MEAT OR PACKAGING OF FOOD PRODUCTS AT THIS FACILITY; ALL FOOD THAT IS SOLD AT THIS FACILITY MUST BE PACKAGED FROM AN APPROPIATELY PERMITTED FACILITY AND MUST COME FROM AN APPROVED SOURCE. All food items there were packaged off site were removed from areas for sale; all these items must be removed from the store by the end of the business day or permit may be suspended. Facility is selling halal beef; need to address source for cutting and storage with owner.
- [1] Original container; properly labeled
Observed frozen fish and chicken in the freezer without labels. Boxes for both and receipts were available; but individual items were not labeled. Also observed bags of white powders (turned out to be salt) that were in plastic bags without labels that had been bagged on site. All items were removed from the shelves and placed away from sale for the public.

- [1] Original container; properly labeled
Still observed a few bags of frozen meat that were not labeled and had split bags. These items were removed from the freezer away from public- Corrected on site. Discussed labeling options with contacts. Sliced fish need to have a label on the bag so it is readable. Also recommend keeping a temperature log of the frozen food items during transport to ensure items are not being temperature abused during transport. All frozen items must be kept frozen; ;=0F; during transport. Recommend keeping all receipts of meat purchased until product is gone for traceability.

- [1] Original container; properly labeled
Observed two top-open; reach-in freezer with frozen fish; chicken and beef. Some of the bags of beef are not labeled. Spoke to owner on the store and he said the meat came from a grocery in Sacramento. Any food sold in the facility must be labeled with the name of the facility it originated from or the place of same for traceability. Contacts showed my grocery receipts for meat purchased in the store. Recommend keeping receipts until all meat products are sold for traceability. All unlabeled food must be removed from freezer and cannot be sold to customers.
- [2] Food protected during storage; preparation; display; service; transportation
Observed chicken; fish and beef in bags stored together in the reach-in fridge. Some of the bags of fish were broken and product was exposed. Different meat should be stored separately to prevent contamination. Any food items in broken bags should be re-bagged to prevent combination of the food items. Keep freezer clean to prevent cross contamination.
- [2] Toilet rooms: self closing doors; fixtures maintained; clean; hand soap/drying devices provided; proper waste receptacle
Handsink in bathroom did not have handtowels. Keep hand sinks stocked with soap and paper towels at all times to ensure proper hand washing.

- General Comments that relate to this Inspection
None of the corrections from the last inspection have been corrected. The grove in the floor in the walk in fridge has been partially filled; but the floor is still uneven and rough. The floor needs to be smooth; sealed; easily cleanable and not pool water. There is still inconsistent hot water in the restroom and the tank-less water heater still needs to be repaired. If all violations are not corrected within the time frame listed below; a reinspection fee will be assessed and the permit will be suspended until the repairs are complete.
