All cold holding checked Ok and recorded < 40 F.All cold holding units are walk in freezers at termperatures observed at 0 F.Thermometers present and temperatures checked 2 times daily. All food properly stored; no raw food products stored over ready to eat foods.F.I.F.O method of rotation; 7-14 days holding time for most food products.All food stored off ground.Warehouse floors swept daily.Refrigerated trucks deliver food.All food is prepackaged.Discussed with operator to keep lid to dumpster closed when not in use to prevent attraction of pests.3 employees will be taking food safety course next month in April.
