Observed thermometer missing in cold holding unit. Ensure all refrigeration and freezer units are stocked with a conspicuously placed thermometer in order to monitor unit temperature.

Observed fan guards in walk-in unit with dust build up. Clean these guards routinely to prevent cross contamination of product stored in walk-in.Observed tape on broken metal edge of reach in refrigerator. Remove tape as it can harbor bacteria and replace with something that is smooth and easily cleanable.

Hand sink clean and stocked. Ice machine good. Ensure unit is cleaned regularly to prevent mold build up. Good ice scoop storage. Three compartment sink with Quat sanitizer. Test strips on site. Speed gun clean. Iced beer stored in separate cooler to keep from contaminating consumer ice. Walk in @ 38F. Restrooms clean and stocked. *Replace fruit cutting board as it's getting worn down and no longer smooth and easily cleanable.
