Reviewed with operator proper handwashing and wash; rinse and sanitize steps for foodservice equipment. Test strips on site.Director and owner has recently acquired food safety certification. She passed on the first initial exam. Child care center will be making jello; pudding; cut fresh fruit; deli sandwiches; P & B sandwiches; bagels & cream cheese; prepackaged-commercially prepared and fully cooked chicken nuggets that will be reheated. Cut fruits and vegetables except for melons; tomatoes and cut leafy greens. Please refer to flow chart # 2 for approved food items to be served. This support kitchen will be reassigned a risk category 2 health permit. Notes: No one else has taken the food safety course for intial exam and has failed. No one else is planned to take the course for initial examination.2 door reach in refrigerator NSF noted at 36 F. Dairy dates current. Date marking observed being utilized. Reviewed with operator to use one of the two wells at the two compartment sink. Please designate one of these wells as a handwashing sink and post a handwashing sign at the sink. Center is approved for the menu listed above and is participating in Healthy Way to Grow Program through the American Heart Association.

At least one employee who is a 30 hour employee shall be a Washoe County Certified Food Protection Managr assigned to this facility who oversees the safe handling and preparatin of food. An instructor list was given to the person in charge at time of inspection.
General Comments that relate to this Inspection Snack menu posted on site as required.Parents provide lunch and center provides breakfast and snacks. Center is not operating under its risk category scope. Center must have at least one CFPM on site to prepare sandwiches at facility. This health permit will be changed to a risk category 2 based on the snack food menu. Cold holding NSF refrigerator noted at 38 F. Do observe dairy dates on milk. One gallon of milk observed with expired dairy date.** Corrected on site **Food properly stored.3 step cleaning process being used on reusable dinnerware at center. Reviewed with operator to monitor chlorine at sanitizer sink to be at levels between 50-100 ppm. Use < 1 cap of bleach to 1 gallon of water. Use chlorine test strip to test concentration to be at proper levels.Chemicals properly stored and labeled.

General Comments that relate to this Inspection ** Ok to open; operate & issue permit**Exempt from CFPM and construction requirementsHave a residential fridge and dishwasher. Fridge <=41F. Majority of meals are from students homes. Facility does provide some smacks like toast; pouring milk and heating up food for kids that are prepackaged or from students lunches. Other snacks are prepackaged and store-bought like muffins or cookies. Permit is approved based on current food practices.
