General Comments that relate to this Inspection The items noted on the inspection conducted on 5/18/2015 have been corrected.Ok to issue permit too operate.High temperature dish machine observed at 106 F on wash and 196 F on sanitization rinse cycle. Required temperatures are 150 F for wash and 180 for rinse. Dish machine equipped with electronic temperature monitoring system that alerts when temperatures are not met. Ensure temperatures are ok when using dish machine.Correct the following items by the next inspection:Install coved base in warehouse areas where base is still missing.Seal bottom of freezer on raised floor.Risk catregory 2 assigned. Must have at least one Certified Food Protection Manager on staff full time who has completed an approved certification course by 8/6/2015.Provide a HACCP/ SSOP plan by the next inspection when conducted.Submit health permit application for demo kitchen before using kitchen for public service.Plans to start operatiosn on 6/15/2015.
