General Comments that relate to this Inspection Ok to issue permit to opearte:Replace the cutting board on pep table againt the wall.Tighten the loose hand sink to wall in back area and recaulk hand sink to wall.Shorten the drain pipes of prep sink and soda dispenser/ice bin to provide one inch air gap above the floor sink.Replace all cracked VCT tiles.Install grilles tha have fallen down above the walk-in cooler and freezer.Screw the prep sink and caulk to to the wall.Walk-in cooler at 36 F.Walk-in freezer at 0 F.Refrigerated prep tables at below 41 F.Noted all hand sinks stocked and functional.Quat sanitizer from santizer dispenser at 3-compartment sink measured at 300 ppm.Facility has glove policy in place; employees are trained to wash hands and put gloves on before handling foods to prevent bare hand contact with ready to eat foods.Risk category 2 assigned; facility requires one Certified Food Protection Manager on staff full time. One CFPM is on staff. Bring and post certificate in the facility. CFPM passed exam on first attempt.Review sick employee with employees to keep employees with symptoms if vomiting or diahrrea excluded until 48 hours after symptoms stop.
