Operator sent out for more chemical while on site. Until chemical arrives and machine tests properly; operator must use three compartment capability (quat sanitizer ok @ 200ppm quat).

    All violations from last insepction conducted on 01/26/2011 have been corrected.All fridge and freezer units must have a thermometer to monitor unit temperature. Assistant manager said they are on order.There is a reach-in fridge in the pizza prep area that is not working correctly. Need to remove or repair to maintain correct temperature. Assistant manager is aware of the problem and has notified management.Floors are dirty; especially under counters or prep tables. Floor need to be cleaned more often to reduce the build-up of feed matter which can attract vermin. Floors in the walk-in fridge are also dirty and need to be cleaned. Need to deep clean wall behind 3-compartment sink; observed build-up of food matter and mold growth.Need to seal holes in the wall behind the sink in next to the dishwasher.
