    All violations from previous inspection have been addressed: - Wooden cutting board has been replaced w/ a plastic board. - Leak in beer fridge has been repaired. - Beer fridges have been cleaned.

    Observed wooden cutting board in use for garnishes that is dirty; warped and pieces of wood were sloughing off. Cutting board discarded during inspection. Cutting boards need to be smooth and easily cleanable and should be washed and sanitized routinely.

    Observed excessive moisture in bottom of beer fridge. Per staff; this is from condensation off beer bottles coming from back reach in fridge and it happens regularly. This issue needs to be addressed to avoid cross contamination of beer bottles and food stored in this unit.

    Observed interior of beer fridges in need of a deep cleaning. This includes but is not limited to shelves; side walls; areas around exhaust fans (dust build up); etc. These units need to be thoroughly cleaned and then cleaned on a routine schedule.

    Hand sink clean and stocked. Dishwasher dispensing 100 ppm Chlorine. *Log sheets are being maintained daily but corrective actions must be documented when applicable. Sani buckets in place with 200 ppm Quat. Dairy fridge @ 41F. Good dairy dates. Good ice scoop storage and separation of consumer ice and storage ice. Ice machine clean. Back reach in fridge @ 40F. Discussed no bare hand contact with ready to eat foods requirements with operator. Facility needs to develop a system for ensure garnishes are not contacted with bare hands. This can be accomplished with tongs; plastic swords; gloves; etc.
