[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized Noted dishwasher operating on empty soap bottle; no chlorine being registered at end of cycle. Owner placed service call at this time; Glasses and utensils must be washed rinsed and sanitized in water bleach solution at 100 ppm in kitchen sink in the mean time.
[2] Accurate thermometers; chemical test kits provided; gauge cock (1/4" IPS Valve) Wrong type of test strips are available on site. Acquire chlorine test strip to use for daily monitoring of chlorine sanitizer to keep at 50 to 100 ppm concentration in dishwasher at all times.
[2] Toilet rooms: self closing doors; fixtures maintained; clean; hand soap/drying devices provided; proper waste receptacle Pump for soap bottle not functioning; not pumping needed amount of soap. Soap in bottle is highly diluted with water. Replace soap bottle and do not dilute soap in bottle. Soap bottle in bathroom noted diluted also; do not dilute soap.
[1] Floors; constructed; drained; clean; good repair; covering installation; dustless cleaning methods Noted floor sticky and dirty inback room/prep area; dirt build-up around dishwasher and trash build up under ice machine and ice bin.Clean floor in all areas and under equipment more frequently to keep floor clean.Floor planks' vinyl is peeling off along edges in back room/prep area. Floor should be redone in near future to provide nonabsorbent and cleanable floor surface.
General Comments that relate to this Inspection Ensure to keep laptop on swivel away from front side of hand sink so as not to obstruct the sink.Dishwasher thermometer checked at 130 F; ok.Noted alcohol sign posted as required.
