Notes:-front handsink stocked. Discussed proper handwashing procedures.-gloves in use. Discussed future regulations of no bare hand contact; proper glove use; and importance of a proper handwashing with glove use.-all cold holding units checked ok; all food 40F and below-facility serves sandwiches which are made in Timber Ridge restaurant (at airport); individually wrapped; and transported to the coffee shop. The sandwiches are reheated and wrapped for the consumer.-3 compartment sink and test strips available. Do check sanitizer concentrations to maintain between 200-400ppm quat.-food stored properly-chemicals labeled and properly stored-ice machine clean; scoop properly stored-dates checked ok; discussed first in; first out procedures with no issues noted-regular pest control by Ecolab-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.
