Observed exhaust/vent area inside walk-in fridge with dust and dirt build-up. These areas need to be thoroughly cleaned and then cleaned routinely to prevent cross-contamination of food and allow refrigerator to run more efficiently.

    Observed cutting board for prepping vegetables stained green and with deep knife groves. Resurface or replace the cutting board to prevent cross contamination.

    Observed various non food contact surfaces of equipment dirty. All non food contact surfaces of equipment must be clean. Entire facility needs a thorough deep cleaning. This includes; but is not limited to: freezer and refrigerator handles; paper towels dispensers; shelves under sandwich prep fridges; etc.Observed exhaust/vent area inside walk in fridge with dust and dirt build up. These areas need to be thoroughly cleaned and then cleaned routinely to prevent cross contamination of food and allow the refrigerator to run more efficiently.

These hoses should be shortened to ensure they do not terminate below the water line. This item corrected on site.Observed front prep fridge leaking water into the bottom of the unit. Dining room reach in at 40F. Good food storage throughout facility. Discussed employee illnes policy. No issues noted. Reach in freezer @ -9F.

Make-up units holding at temperatures within regulation. Eggs 41F; sausage 42-44F; egg whites 42F; chicken and turkey 37F. Hot Holding good. Soup @ 170F; meatballs 161F. Discussed cooking process of hot items. All items cooked in microwave prior to hot holding. No cooling of product performed on site. All product received pre-cooked. No raw; potentially hazardous foods. Freezer @ -9F. Beverage cooler @ 28F. Three compartment sink at 400 ppm Quat. Test strips on site. Discussed date marking procedure. No problems noted. All food product storage good and 6" off ground. All chemical bottels properly labeled. Restrooms clean and stocked. Discussed employee illness policy and the need for employees with gastrointestinal illness (vomitting and diarrhea) to be excluded for 48 hours after symptoms stop. Cheryl is in the process of obtaining CFPM certification. Test date is 4/3/14. Final WCHD certificate should be obtained no later 5/1/14.Facilty is in need of deep cleaning under shelving units; behind equipment and in hard to reach areas; walls; equipment handles. All areas need to be thoroughly cleaned and then a regular cleaning schedule should be established for the entire facility. Unused equipment in back storage area should be removed from premises.
