Comments: Ribs at 116 F after being cooked sitting out at room temperature. Cooling process needs to begin once product reaches 135 F. Get ribs into freezer/cooler to start cooling process.10-12 pork shoulders at 69-81 F. No documentation on where the product is in the cooling process. Chef believes we are at 2 hours. Move pork to walk-in freezer to get down to 70 F, then 4 hours to get to 41 F or lower. Tape cooling times to carts to monitor the temps and times of cooling process.
