Crock Pot / Slow Cooker Recipes (healthy, vinegar, gravy, cocktail)

My favorite is Salsa Chicken ... 4 chicken breasts (I put them in frozen because I'm gone for more than 8 hours) sprinkle an envelope of taco seasoning on them, top with a can of corn (drained), a can of black beans (drained and rinsed), and a jar of salsa. Shred when it's done. Serve it on rice, in tacos, or on chips with cheese like nachos.
I also enjoy breakfast casseroles ... a bag of frozen hash browns, browned/crumbled sausage and a bag of shredded cheddar mixed up in the CP, then in a bowl you mix up 12 eggs, a cup of milk, a tablespoon of ground mustard, and salt & pepper, and pour it over the hash brown mix.
How long does that take? (breakfast one)
It all gets done at the same time?

I have to say, that breakfast casserole sounds delicious. DH would love it, too. I've made the cheesy hash brown recipe (used to bring that to work often), but have never tried anything like yours.
Sounds perfect for the winter months, too, and nice to wake up to!
The easiest and quickest for me is to put a frozen pot roast in the crock pot, or chicken, or stew meat turn it on low and let it go all night or all day.
When it is time for supper I take out the meat, put the crock pot (not the base) on the stove, make a quick pan gravy if we are having boiled potatoes, steam a vegetable toss in some crusty bread and call it supper.
This weekend and perhaps tonight I'll take a package of 15 bean soup mix put it in the crock pot, cover the beans with chicken stock, toss in a frozen kielbasa and let it cook on low for several hours. Then after the kielbasa splits I remove it, cut it into smaller pieces and put it back in with the beans turn it down to the lowest setting and let it cook for a few more hours.
(I do not use the seasoning packet that is included with the bean soup mix, it is much too salty).
Man... now I wish I'd heard of the breakfast casserole last night! I am going to have to try that one!
My wife makes lasagne in the crock pot - normal assembly like oven lasagne, but she doesn't pre-cook the noodles. Our big crock pot is oval which probably helps with that.
She also makes meatloaf in our smaller round one. I made her a stand that fits inside out of stainless steel expanded metal - that keeps the meatloaf up out of the drippings.
I've also made pea soup with ham, pork & sauerkraut, and a stewed cabbage dish called blaukraut in the crock pot.
3 bricks of 3 diff cheeses 8 ounces or 16 ounce can't have too much cheese
1 big can fried beans
1 big jar of Pace salsa
Minced garlic
Turns into a queso cheese dip/ fondue...put thick slices of Italian bread at a party.
They will slop it on their plate ans go back for MORE!
