Description: Owner Danny Edwards learned well from his pop, legendary smokemaster Jake Edwards. He dry-rubs his ribs in a secret spice mixture before smoking them out back for about eight hours. The result is a deep-down flavored slab that’s tender but with just enough chewy texture to make you work at falling in love. The brisket sandwich—arguably the most tender in town—is the top seller, with ribs and burnt ends running close behind. Danny also does a mean barbecued chicken. Now that Danny has moved from his tiny 18-seat spot downtown to these more spacious 60-seat digs, he may have to come up with a new motto to replace the “Eat it and beat it” painted on the 45-pound, concrete pink pig.

Description: It’s always fun to watch a tenderfoot walk through the door and take a step backward when assailed by a loud “May I help you?” from behind the counter. The menu is printed on the wall above the open kitchen, but if you get flustered just remember you can’t go wrong with the ribs and fries. Or go for the mixed plate to try the ribs, beef brisket, and beef sausage. Gates offers four flavors of sauce, and the mild version makes a fine ketchup substitute for dipping fries. And don’t be surprised if you find yourself heading back to the line after your meal, this time yelling back at the order taker, “Yeah, you can help me. Give me a slab to go.”

Description: Although not as famous as Arthur Bryant’s, L.C.’s is usually on the top-five list of people who really know their smoked meat. The sauce is sweet and tangy. The sweet potato fries are deep-fried strips of heaven. You’ll want to eat until you hurt. Table space is generally gone by a quarter to noon, and when there’s a Saturday game at Kauffman Stadium, cars line up early. Be forewarned, though: This is far from a fancy location. Perhaps there’s a good reason for the bars on the windows, and even the smoker in the parking lot is chained to a utility pole. Lunch and dinner are served Mon through Sat.

Description: Naturally this joint knows how to smoke meaty ribs and flavorful brisket. They’ve been doing it since 1934, longer than anyone else in Kansas City. Lines extend out both side doors by noon. It can be a madhouse, but you can always show up when the crowds are gone; it’s open until 10 p.m. Mon through Sat and until 8 p.m. on Sun. Fans go for the hearty beef, pork, and ham sandwiches, or “half bird and fries,” tasty barbecued chicken and crispy zigzag-cut fries served hot in a waxed paper bag. The baby back ribs are tender and lean but are available only on Sun.

Description: Every night is Mardi Gras at these rowdy spots that serve up traditional Cajun dishes such as blackened seafood, gumbo, oysters on the half shell, and po’boy sandwiches. Or just order the all-you-can-eat hushpuppies for $139; the order includes a free bottle of Dom Perignon. At night this becomes party central as live jazz, Dixieland, and blues play five nights a week. During the day the original location on West 39th is often a hangout for interns from the KU Medical Center up the street looking for a little relaxation and roux between rounds. Jazz is open from 11 a.m. to midnight daily. Catch some terrific local blues talent at the Village West location, several nights a week.
