Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing. Observation: No adequate thermometer and had food thermometer with the big probe in old reach cooler in dry storage. Owner brought extra and put in fridge. Corrected on site.

Owner has reported for years she was approved by LCPH as the kitchen is laid out now. If EVER ANY REMODELING IN THE FUTURE SHALL INSTALL A HANDWASHING SINK BY THE 3 COMPARTMENT SINK. REPEAT VIOLATION.
Plumbing system maintained in good repair Observation: The extension faucet for the 3 tank sink is loose. REPAIR as needed. The owner stated this has been repaired in the past.
Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods Observation: Raw eggs were stored over ready to eat foods. Shall keep raw eggs lower in the cooler than ready to eat food items to prevent contamination. CORRECTED ON SITE.
Restricted use pesticides Observation: "TERRO" unapproved ant killer spray in the kitchen. May ONLY use approved insecticide. The insecticide was discarded during this inspection. CORRECTED ON SITE.
