    Observation: Food was not properly date marked in the refrigerator. PIC has begun to discard all the establishment related food in the kitchen refrigerator at time of inspection. Establishment is required to come up with a written date marking procedure.
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation: There was not a thermometer placed in the kitchen refrigerator. Send copy of a invoice for purchased thermometer by 4-17-15.

    Observation: There was no thermometers placed in the kitchen refrigerator and the bar cooler with the PHF items.

    Observation: The chlorine bucket sanitizer at the bar exceeded the required concentration. - COS

    Observation: Food was not properly date marked in the kitchen refrigerator.

    Observation: The floors were soiled underneath the equipment at the bar, there was debris on the floor.

    Observation: The exteriors and handles of equipment in the kitchen were soiled. Shelving was soiled. The hood was soiled. The interior of the refrigerator was soiled.

    Observation: There was a package of raw hamburger in the refrigerator that exceeded the seven day date marking limit, it was dated 3-13-14. Disposed of at inspection.

    Observation: The hood filters were soiled.

    Observation: There was not a thermometer provided inside the bar cooler with the juices.

    Observation: The wall near the mop sink was in bad repair. The wall/ceiling above the kitchen three compartment sinks was in bad repair. There was no caulking at the top edge of the kitchen three compartment sink.

    Observation: The wall behind the fryers and grills were soiled. The floor underneath equipment and along walls in the kitchen were soiled throughout. There were cobwebs in the kitchen. At the bar, there was debris on the floor behind the equipment.
