All clean and soiled linen shall be properly stored non-food items shall be stored and displayed separate from food and food-contact surfaces. Exhaust hoods shall be provided to remove toxic gases, heat, grease, vapors and smoke and be approved by the local building department. Canopy-type hoods shall extend 6" beyond all cooking equipment. All areas shall have sufficient ventilation to facilitate proper food storage. Toilet rooms shall be vented to the outside air by a screened openable window, an air shaft, or a light-switch activated exhaust fan, consistent with local building codes. Beef tongue at steam table measured 1127 degrees F. Preheat food previously cooked to 165 degrees F/hold at 135 degrees F minimum.
Hot water only reached 82 degrees F. Maintain hot water to facility to 120 degrees F minimum/110 degrees F for utensil washing. Owner states hot water is available, but takes time to reheat after use. Check water heater for proper operation/sizing (not visible). Wait for water to reach 110 degrees F prior to washing dishes and/or use water heated at store/microwave temporarily. Provide thermometer to check water temperature.
Pinto beans in 15L plastic container measured 127 degrees F. Employees state they cool by placing container into a tub with ice after room temperature cooling. Use shallow metal pans to cool more quickly and fill ice plus water to the level of food to facilitate cooling.
Proper cooling requirement: cool from 135 - 70 degrees F within 2 hours, then 70 - 41 degrees F within 4 hours. If food does not cool to 70 degrees in 2 hours then total cooling time equals 4 hours.
Provide a thermometer in a visible location in the prep refrigerator.
Soap was not available at the kitchen handsink. Keep handwash supplies stocked at all times.

COLD WATER VALVE AT KITCHEN HAND WASH SINK WAS CLOSED TOO TIGHTLY TO USE.
NOTED SEVERAL WIPE TOWELS ON WORK TABLES.
OBSERVED A WOOD BOWL AND A CERAMIC CUP USED AS SCOOPS IN DRY INGREDIENT BINS.
