Notes:Facility stores; repackages and distributes whole produce.-restrooms clean and stocked-food stored ok-walk in at 42F; no freezers used for food storage-thermometer available-per operator; no cutting of whole produce is done-chemicals labeled and properly stored-date marking system in place; discussed first in; first out procedures with no issues noted-no pest issues noted at time of inspection. If pests are noted; they must be abated by a licensed pest control operator.-dumpster checked ok-discussed approved sources; per operator all sources of produce are from Dept of Agriculture certified farms.-discussed transportation of produce with no issues noted-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

Observed dirty knives in produce processing area *facility is not permitted or equipped to cut whole produce. Discontinue any cutting/slicing of whole produce . If operator wishes to process produce; a separate hand sink and washing sink would be required and facility Risk Category would increase to a Risk Category 2 with one Certified Food Protection Manager required. Corrected.
