General Comments that relate to this Inspection OBSERVATIONS:- No other CFPM's at this facility; no failures past year.- Quat ammonia sink sanitizer tested 200ppm with test strips available.- If using bleach sanitizer water; test strips must be available for the proper makeup. Makeup and maintain bleach sanitizing water at 50-100ppm. No bleach test strips available at the time of inspection - provide.- Ensure that all hand washing stations are stocked with soap and paper towels at all times during operation. (e.g. missing towels at production room sink). - Use designated hand sink for handwashing only. If another sink is designated; it must meet the same criteria (splash guards) with signage posted. Hand washing sinks may not be used as food preparation sinks.- Homestyle refrigeration unit has been installed in place of a commercial unit that recently failed. Homestyle unit must be replaced with a NSF listed commercial refrigeration unit within 7 days (by 3-28-16). Homestyle unit was maintaining adequate temperature; observed 40F.- Post hand washing signs at hand sinks as required (signs to operator).- Observed good emloyee hygiene (hand washing w/ glove use). Reminded operator of No Bare Hand Contact with ready to eat foods requirement.- Continue to wash; rinse and sanitize all ready to eat dishes and food contact surfaces.
