Thermometer registers 182 f for final rinse temp. Dish machine must register @ 180 f or over for final rinse temp.

General Comments that relate to this Inspection Opening Inspection:All Special Processes (Sous Vide & Reduced Oxygen Packaging) that are conducted in this facility will need to cease and desist starting today due to change of ownership. The Washoe County Health District will need a HACCP plan for each special process that will be done in Campo. Campo will be given 30 days to complete plan and turn into Washoe County Health District. Once HACCP plans have been approved Campo may start special processes again. All paperwork has been given out. Correct the following: 1. Tile on wall missing in area leading to cook line and walk in cooler. 2. Clean all ceiling panels in prep room. 3. Final rinse gauge is not working properly on dish machine - machine at properly temperature - 12/14/15.Notes:Handsinks ok. Dish machine 180 f;Ice machine ok.Reach in coolers 40 f.Freezers @ 0 f. Walk in coolers 40 f. Equipment ok Floors ok. Walls ok.
