Meat cases at below 40 F.Meat walk-in cooler at below 40 F.Noted other hand sink next to meat cutting area stocked and functional.Cleaning in sanitizing procedures in 3-compartment sink not properly described by staff. Must wash rinse and sanitize all utensils in 3-comaprtment sink. Slicer and meat saw must be broken down and clean and sanitize all in-place surfaces with towels with wash; rinse and sanitizing solution after using or every 4 hours if used continuously.
