[3] CFPM or person in charge present; certificates posted as required Dishes are being washed by a staff member of the Caughlin Club not of the child care. Cleaning and sanitizing of the dishes for the child care is not being supervised. Contact said they are going to put the certified food manager in charge of the cleaning and sanitizing of the dishes from the child care; contact has also printed off dishwasher logs from the WCHD website. Corrected on site.
[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized Dishwasher is not dispensing any measurable sanitizer. Unit must be repaired or replaced. Due to limited number of dishes; facility is approved to wash dishes in the 2 compartment sink in the kitchen using the three step cleaning process.
[2] Dishwasher facilities designed; constructed; maintained; installed; located; operated as required Dishwasher is not reaching the minimum 120F temperature for rinse. Need to repair or replace unit so that it is operating as stated by manufacutrer and reaches minimum 120F rinse water temperature.
[2] Accurate thermometers; chemical test kits provided; gauge cock (1/4" IPS Valve) A thermometer need to be available to staff to check the final temperature of food cooked for students. Inaccurate thermometeres/no chemical test kits available. Must provide accurate thermometers/chemical test kits.
