No violations observed at time of inspection. No food observed being prepared or cooked at time of inspection. Cold holding makeup table recorded 36 F. No food for public observed being stored inside 2 door makeup table/cold holding unit. Facility shall must snack containers on other side of handwashing sink so that the backsplash of water from handwashing does not contact clean food containers. A splashguard mounted to the side of the handsink cannot also be installed to prevent the splash of water from contaminating food service equipment. Handsinks properly stocked with liquid soap and sanitary disposable towels.Chlorine at dishwasher recorded at 100 ppm. Do lower chlorine concentration at chlorine sanitizer bucket to be at levels between 50-100 ppm. Health inspector noted concentration high.

All construction requirements corrected. Please place a handwashing only sign at all handsinks. Turbochef toaster oven unit is NSF approved.Dump sink installed at front counter. Cold holding two door reefer noted at 38 F. This deli will be issued as a risk category 3 health permit and will require at least one full time (30 hour) employee to be designated to this facility to oversee safe food handling operations and take an approved Washoe County Food Safety Instructor Course within 60 days of permit issuance. A copy of Certfied Food Protection Manager Instructor's was given to operator at time of inspection. All food served at deli will be made to order and all protein/meats are all pre-cooked. No raw meats will be served. OK to issue health permit; OK to operate. Please post official health permit for deli in a conspicuous spot in facility once received via USPS.

All violations corrected on site. Cold holding reach in reefer recorded @ 41 F. Discussed with operator and Ron Campbell to adjust thermostat to cold hold at 40 F or lower. OK to stock reefer with food and beverages. Currently reefer only stores chilled barware.Vendor C & C refrigeration will have tube cap replaced before by 5 PM. Routine service and maintenance is recommended to ensure that cold holding equipment functions properly.
