Do call health inspector when CFPM requirement is met on or before 08/19/10.Mobile truck serves tacos; burritos; tortas and quesadillas. Route serves area around Oddie Blvd.; and Silverado. between the hours of 5 PM - 1 AM.Chemicals properly stored and labeled. Handsink properly stocked. Cold holding units recorded < 40 F. Steam table @ 153 F.No food stored inside unit. All food stored at depot and mobile truck serviced daily at depot located Aguitas Bar and Grill located on Prater Way.

No violations observed at the time of inspection:No final cook temperatures observed at the time of inspection; however; we reviewed final cook temperatures and hot-holding requirements. Facility does not cool any product; food is prepared for each order.Mobile food trailer is equiped with a three-compartment sink; we reviewed dishwashing sanitization requirements. Facility washes most product at the depot location; however; some washing is performed on the unit. Facility uses liquid chlorine bleach at 50-100ppm.All refrigeration checked good; facility has newer NSF refrigeration units. One door reach-in observed at 37 degrees; two door unit observed at 42 degrees.We reviewed the importance of handwashing and minimizing any bare hand contact with ready-to-eat foods.Mobile food unit construction observed in very good condition.
