    All violations noted on 3/25/15 inspection have been corrected.-raw eggs properly stored-cooling beef temped at 105 - discussed cooling procedure with operator with no issues noted. Provided cooling log to document procedure.-observed good employee handwashing-public restroom stocked and clean-sanitizer buckets available; tested at 100ppm chlorine. Operator has test strips for quat; do get test strips for chlorine to ensure buckets are maintained between 50-100ppm chlorine.

  • [4] Facilities to maintain product temperature
    Observed beef tongue soup with a recorded temperature of 67 F. Reviewed with operator to reheat the beef tongue soup rapidly to 165 F for 15 seconds after it was determined that the employee had left the soup out on the counter at 7 AM and in the temperature danger zone for less than 2 hours. Observed whole raw shell eggs improproperly stored at room temperature. Discussed with operator to store whole raw shell eggs under proper temperature controls. Time may be used as a public health control but must be documented as a standard operating procedure and be time marked for the time the eggs start in the temperature danger zone and the time the food will be discarded within 4 hours later.

    Observed employee wash hands at handsink and dry hands on apron. Employees shall wash hands at the three designated handsinks throughout the facility and dry hands using only sanitary disposable towels. * Health inspector instructed employee to rewash hands and dry hands with sanitary disposable towels. This deli has a public restroom located in the strip mall. The employees have access to the bathroom with a supplied key from property manager/owner. Bathrooms observed visiblty dirty. No toilet paper was in any of the 3 stalls and no sanitary disposable towels were at either handsink. Floors and toilets observed dirty. The restrooms that are locked to the public but are used by the employees must be kept in a sanitary condition. The conditions in which the restroom are in is evident of lack of routine cleaning and poor maintenance. * This is a potential cross contamination area of concern and shall be addressed immediately. Ther permit holder is responsible for employee restrooms to be maintained in a clean and sanitary condition and PROPERLY STOCKED at all times.** Person in charge stocked bathrooms with toilet paper and sanitary disposable towels at time of inspection. PIC made contact with property manager at time of inspection. ** Corrected on site.

    Facility shall acquire sanitizer buckets to store wiping cloths in. Santizer buckets with either chlorine or quaternary ammonia shall be made for each workstation.Working surfaces and dining area shall have contact surfaces wiped down with sanitizer on a routine basis.

    Cold holding temps. recorded:Ham slices @ 40 F; bologna @ 39 F; sour cream @ 38 F and cut tomatoes @ 39 F. Walk in unit recorded at 40 F. Discontinue storing jalepenos in opened metal cans. Transfer jalepenos into a food grade container. Hot holding temps. recorded:Beef @ 192 F; beef soup @ 184 F; rice @ 165 F and refried beans @ 199 F.Chemicals stored properly. Handsinks properly stocked.A reinspection is required.

    This grocery permit is late for its annual permitting fee. Health inspector instructed person in charge to make the required permit payment to keep the grocery store open. Estella will be making payment directly to health district today on 03/25/15. Please notify health inspector once payment has been made to Environmental Health Services located at 1001 E Ninth Street; Reno; NV 89512.No violations observed at time of inspection. Cold holding "cold drinks" cases noted at 38-40 F. Dairy dates observed current. Food properly stored off ground. Facility does not sell any damaged food products.

All equipment is NSF approved.Cold holding units checked OK and within regulation. *** This permit is is in same facility with a grocery store and deli permit and will be allowed to have only 1 Certified food protection manager to be designated to this facility ***OK to operate; OK to issue health permit.   • General Comments that relate to this Inspection
    The following items must be corrected prior to issuance of health permit:1) Handsink in cook room must have both hot and cold running water under mechanical pressure. Observed no cold water and handles to water shut off for both hot and cold water are missing.2) A handsink must be replaced in the deli area and be located within 25 visible feet of the deli operations. 3) Stock all handsinks with liquid soap and sanitary disposable towels. 4) Please replace bulbs in all non working lights. Makeup table recorded at 37 F. Equipment is new and NSF. This deli will be assigned a risk category 2 health permit. At least one(1) certified food protection manager must be assigned to this facility and is at least a 30 hours a week employee.Please call health inspector when all items are completed at 328-2682.

    The following items must be corrected prior to issuance of health permit:1) Replace all missing ceiling tiles overhead. 2) Fill all holes in walls and at 3 compartment sink.3) Provide a threshold at back exit door to prevent vermin entrance.4) Seal bare wood at stairs to office.5) Seal concrete floors throughout to be smooth and easily cleanable. Notes:Grocery store will be using walk in cooler for dry storage. Walk in cooler does not have a compressor to operate the cold holding unit and will be converted to hold dry goods. Bathroom facilities are located outside facility in strip mall. Tenents in strip mall have keys to restroom. Restrooms are locked and not for public use. Call for a reinpsection at 328-2682.
