[2] Food protected during storage; preparation; display; service; transportation Observed chocolate for milkshakes in metal can that have been opened stored in walk in cooler. Store all items in opened metal can in food grade containers or use product up and discard. Discussed with manager onsite and corrected. Observed cooked onions in drawer cooler @ 55-70 f. Cooked onions were prepared around 8am and stored in drawer cooler. Onions were pulled out and put in a ice bath and placed in reach in cooler. Temperature of onions in reach in cooler/ ice bath after 20 minutes @ 48 - 54. Corrective action taken and temp coming down.
[2] Food contact surfaces of equipment and utensils clean; free of abrasives; detergents 170) Food contact surfaces dirty. All food contact surfaces must be clean and free of debris.Cutting board along cook line in need of resurfacing or replacement. Cutting board has numerous groove marks making surface not smooth; sealed; easily clean. Correct by 9/10/14.
