Notes: Below noted at time of inspection:1) This is the depot for Mexican Hot dog2) Refer is able to maintain supplies3) Cooks and preps vegtables on Fri-Sun4) Does his dishes here nightly and utilizes the garbage area.5) Depot ok for sustainability6) Just worried about distance; works off Yori and cooks out in Spaks; if this becomes a problem will have to get another depot.

Notes: below were observed at time of inspection.1) Everything was attached to the cart; Ice chest; generator; water heater and fryer. No serving off anything not attached to the cart ie tables; extra ice chest.2) Cart was clean but will do a deep clean prior to service.3) Menu able to be sustained on cart; if hot hold then hot hold hot dogs at 140 degreees F; onions; tomato; cheese; ham; and extra hot dogs at 40 degree F.4) Stem thermometer and test strips available.5) Will have a sanitizing bucket set up.6) Handsink stocked with soap and paper towels; has hot and cold water.7) Everythinig must be preped; stored; and cleaned at the depot.8) Must obtain a certified food protection manager certification and get a Washoe County card within 30 days.9) If you sell cart then the permit is no longer valid and will have to obtain another permit.10) Change in menu will have to be approved by health department.11) Will need to show a city of Reno business license at 90 day inspection.12) Ok to issue permit and sticker.13) Failure to obtain a city license could result in suspension of permit.14) Has a greywater tank on order; must hook up when arrives; ok to utilize bucket with lid on top.15) All corrections from opening 8/12/10 inspection have been corrected.

Notes: Below must be corrected prior to opening:1) Everything utilized in production i.e. fryers; ice chest; drink ice chest; has to be attached to the cart. 2) The cart must be self sustaining; cannot use residential or commercial electrical power sources. If utilizing a gennerator it must also be attached to the cart.3) No hamburger sales; raw to ready to serve is not permitted for push carts.4) Everything must be loaded at the depot; nothing ot be stored on cart or washed on cart. Washing of utensils and pans must be done at the depot.5) If using an ice chest to store the hot dogs must be in original packages then stored on steam table once opened; or stored in a food grade container that can be submerged in the ice. 6) Hot water heater was currently ran off residential power; not self sustaining must be able to make hot water in the field with a self sustaining source.7) No use of additional skillets; only the fryer is approved. If use must discard the oil at the depot in an approved location.8) All condeminents must be held in ice on the cart.9) A level two risk category so will need a certified food protection manager permit within 60 days from opening.10) Name of cart must be on both sides of cart and permit sticker once issued must be displayed on cart.
