[1] In-use food; ice dispensing utensils properly stored Observed ice scoops being stored in ice with handles down. Store ice/food scoops within separate clean container or in product with handle up to minimize hand contact with product. Corrected on site.
[3] CFPM or person in charge present; certificates posted as required Facility given deadline of 8/29/15 for CFPM after change of ownership. This has not been completed yet. Shane scheduled to take test 9/16/15. Facility must contact health inspector @ 328-2689 once test is taken and ASAP with results or permit to operate may be suspended.
[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized Three compartment sink in use during inspection with 0 ppm Quat as dispenser appears to be empty. Facility changed to 100 ppm Chlorine during inspection. Chemical sanitizer log sheets required for sanitizer section of three comp sink until further notice. Chemical rep scheduled to come Thursday 9/17 so sanitizer will be reinspected Friday 9/18. Facility must use Chlorine bleach until proper levels of Quat sanitizer are being dispensed.

General Comments that relate to this Inspection Hand sinks clean and stocked. Restrooms clean and stocked. Tall reach in fridge @ 42F. Roast beef @ 36F. Large shorter reach in fridge @ 42F. Roast beef @ 41F. Make up unit. Dip in bottom @ 41F. Turkey in top @ 39F. *Ensure thermometer in this unit is visible to staff at all times. Ice purchased from cash and carry. All deli meat from Cash and Carry and slicing. No issues noted with cleaning procedures for slicers. Trash area clean and well kept.Dry storage OK- bait traps in place for insects with very little activity on them. *Ensure all items are stored 6" off floor at all times. Discussed no bare hand contact with ready to eat foods requirements with owner and cook. Gloves and utensils available and staff will implement procedures to ensure they are used. Paper used to serve bagels at front counter.

Facility is much cleaner and organized. The following items must be completed no later than 8/29/15: - Replace two small homestyle refrigerators with commerical grade units. - One full time staff member must become a Certified Food Protection Manager. List of approved certifiying companies left with operator at last inspection.Facility will be a Risk Category 2.

General Comments that relate to this Inspection Ok to issue permit until July 13; 2015 at which time the following items must be corrected or the permit to operate may be suspended: - Replace or discard green cutting boards.- Replace or resurface white cutting boards so they are smooth and easily cleanable. - Remove napkins from behind electrical conduit above grill. - Deep clean entire kitchen including all floors; walls and ceilings; exhaust grill over doorway to dining room; all fans; shelves; storage bins; etc- Deep clean exterior and interior of all equipment- Remove all excess food service items and equipment that are not used during daily business activities. - Clean up area around water softener and chemical storage. - Replace wood on top of cart to left three compartment sink with a surface that is smooth and easily cleanable and will not harbor bacteria.
