Observed fruit salad with sliced melons at 56F in 2 door Pepsi reach in refrigerator. No date mark on salad. Unable to verify length of time in temperature danger zone. Product voluntarily discarded. Corrected on site.Repair or replace unit to hold TCS foods at 41F or below by 2/27/16. Maintenance was called and arrived on site during inspection. Do not use unit until repaired and holding at 41F or below.

No other CFPMs at this facility.Facility has not had employee(s) take and fail one of the recognized CFPM exams in the past year.This facility is used for events only. Food is prepared in event center kitchen and brought up for service. This facility is mostly used for storage. If facility is to be used for food prep; clean and sanitize equipment before use.-hand sink stocked; do post handwashing signs at all handsinks-walk in at 36F; freezer at 8F-food properly stored-dairy dates checked ok; Recommend removing dairy products if kitchen is not frequently used so they don't expire.-thermometers available-dishes done in room service kitchen-lights shielded-restrooms stocked and clean-several reach ins observed with no product; ensure temperuature is holding at 41F or below before use-dumpster ok-chemicals labeled and properly stored-regular pest control by Ecolab; no pest issues noted at time of inspection-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

Facility shall replace gaskets at "Vogt" main ice machine maker. Remove all duct tape. Materials shall be smooth and easily cleanable. Duct tape is not an approved material.

Facility shall organize and declutter banquet kitchen room. Remove items not used in the operations of the business such as the dirty shovel stored next to handsink. This will prevent vermin harborage and cross contamination issue.

Observed only popcorn being made at time of inspection. Reviewed with operator handwashing procedures after employees touch face or clothing and handling food. Employees shall wash hands when touching any part of the face and before handling food especially ready to eat foods such as popcorn.Reviewed with operator glove use policy. Do review with staff to have hands properly washed before putting on clean gloves. Cold holding units checked OK and within regulations < 40 F. Food properly stored off ground. Chemicals properly stored and labeled.Reviewed with operator procedures for monitoring handwashing with food handlers who are shared amongst the various health permits throughout the Peppermill Hotel and Casino. Employees must be monitored for proper handwashing.

Designate an area for employees to store their personal belongings. Employees shall keep their personal belongings in their lockers or a designated area away from food and food contact surfaces to prevent possible cross contamination.
