No violations noted at time of inspection.-hand sinks stocked; post handwashing signs (provided) at all handsinks-no bare hand contact policy in place-gelato machines clean; discussed cleaning procedures with no issues noted-gelato base in walk in at 39F; ROP bags marked -prep tables clean-gelato is mixed; frozen in blast chiller; covered and then kept in freezer; dated marked-3 compartment sink in bakery; test strips available-freezer at -2F-food stored ok-FIFO procedures in place-employee restrooms stocked and clean-regular pest control at Ecolab; no issues noted at time of inspection-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

Do increase Quat sanitizer at sanitizer bucket to be at levels between 200-400 ppm. All wet wiping cloths shall be stored in sanitizer when not in use.
