    Notes: Bar not in operation at time of inspection.-handsinks stocked; post handwashing signs (provided) at all handsinks. Discussed no bare hand contact.-speed guns clean-ice machine clean; scoops properly stored-no TCS food on site; ensure refrigeration units maintain 41F or below before use.-restroom stocked and clean-regular pest control by Ecolab; no issues noted at time of inspection.-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

    Facility will be removing glasswasher from service area. All glassware will be taken to 4th floor buffet dishwasher after any contracted events. Glasswasher may be re-installed in bakery for bakers to properly wash; rinse and sanitize personal baking equipment.

    Per Jon Wagner; beverage manager for the Peppermill. A work order has been submitted to repair the glass/bar washer. The bar has been closed and a part for the bar washer has been ordered to repair non-working machine. Facility requests 30 day extension to repair glass/bar washer. ** A reinspection is required on 04/03/15. Failure to correct violation will result in a re-inspection fee being charged.

    Observed bar guns and holders with visible soil buildup and mold growth. Bar guns and holders shall be cleaned daily. Discussed with operator to remove bar gun holders on a daily basis and spouts to bar guns and scrub with a cleaning brush. A flashlight is an effective tool to inspect the cleanliness of the bar guns and holders throughout the facility due to the low lighting commen in bar areas and the dark black color of the bar gun holders.

    Observed shelves where glassware is stored dirty. Non food contact surface not maintained properly. All non food contact surfaces must be maintained properly.Discussed with operator to create a routine schedule for cleaning shelving wheref all barware/glassware is displayed and stored for use. This is a cross contamination point and shelving must be kept in a sanitary condition.

Reviewed with operator to discard open metal containers of fruit juices after an convention/banquet event or use them the same day of being opened to prevent the can from oxidizing and contaminating the juice.
