No violations observed at time of inspection. Thank you. Cold holding units checked OK and within regulations. Walk in units checked OK; food properly stored. No raw over ready to eat. Dairy dates current.Dry storage room observed organized. Scoops properlys stored in dry ingrediant bins. Chicken stock observed boiling in steam kettle. Reviewed cooling process for chicken stock. Operator demonstrated proper cooling procedures for hot food. Handsinks properly stocked with liquid soap and sanitary disposable towels. Rename health permit from Peppermill Basement Kitchen to Peppermill Bimini Basement Kitchen. Health inspector will submit facility action sheet to rename kitchen.

Discussed with operator cleaning schedule of floors in walk in unit that is shared by room service. Floors shall be free of all loose debris and swept daily. Walk in recorded at 36 F. NY steaks temped at 35 F.Veil stock hot holding at 157 F. Action items to be corrected:1) Repair slight leak at handsink.2) Fill holes in Stainless steel wall at cookline.
