    Leak observed in prep sink. Observed sprayer hanging in bottom of sink. Repair leak and shorten hose of sprayer or install a hook so the sprayer is held above the rim of the sink to prevent any potential back flow issues.

    This facility is used as needed for service in the events center. Facility not in operation at time of inspection. -hand sinks stocked; do post handwashing signs (provided) at all handsinks; discussed no bare hand contact requirements-reach ins at 36F; 39F; 39F and 37F; thermometers available-ice machine clean; scoops properly stored-all dishes are done in events center stewarding facility-food properly stored-lights shielded-chemicals labeled and properly stored-restrooms stocked and clean-regular pest control by Ecolab; no pest issues noted at time of inspection-facility is clean and well maintained-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

Thermometers present in all cold holding units.Ice machines observed clean. Routine maintenance and cleaning done. Quat dispensor recorded at 200 ppm.Handsinks properly stocked with liquid soap and sanitary disposable towels.

    All banquet service station mobile carts shall be cleaned throughout. Declutter Stainless Steel Cabinets door faces and interior of all food debris buildup. Declutter non-essential items not used in the operations of the business.

    Improper storage of single service articles. Store all single service articles at least 6" off ground to avoid cross contamination. All single service cups; cutlery and take out containers shall be stored properly.

Coffee machines; ice tea maker and juice machines observed clean. All equipment is cleaned after each banquet shift.

Portable carving stations observed clean. Good storage of clean equipment such as cambros in portable transfer units. .Walk in freezer recorded @ 10 F; all food observed frozen; walk in refer recorded @ 30 F. 2 door reach in recorded @ 40 F.
