    Notes:-food properly stored-chemicals labeled and properly stored-walk ins checked ok - all product noted at 41F or below-freezers checked ok - all product frozen-ice machine clean; scoops properly stored-thermometers available-dates checked ok; FIFO procedures discussed with no issues noted-regular pest control by Ecolab; no issues noted at time of inspection-restrooms stocked and clean-dumpster ok-facility is clean and well organized--discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

    050) Food product stored on floor. Store all food product at least 6 inches off floor to prevent potential cross contamination.Observed several boxes of prepackaged candy; nuts and other snacks stored on ground in upstairs storage area.

    Single service articles properly stored off ground.Cold holding units checked OK and within regulations. No chemicals stored next to food. Facility is contracted and has active pest control operator that services facility regularly.Bathrooms throughout facility observed clean and stocked. Discussed with operator to label rendered bacon grease stored in recycled sour cream plastic containers to prevent misuse.

    All cold holding walk in units checked OK and within regulation. Cold holding temps. recorded:Chicken @ 37 F; turkey @ 41 F; pork butts between 28-39 F; pico de gallo @ 39 F; beef @ 39 F and Cook chill staging walk in has 24/7 electronic monitoring for ROP foods for proper cold holding. HACCP in place at facility for ROP foods. This storage and staging annex does not prepare any food or handle any open food products. Please clean the perimeter of the entire upstairs storage balcony area.

    Hot holding temperatures recorded:Cream of mushroom soup @ 140 F; brown gravy @ 151 F; corn and beans @ 147 F.Cold holding units checked OK.Observed proper cooling of menudo soup in ice and water bath with food cooling in shallow pans. Ecolab services facility regularly for both cleaning and sanitizing chemicals; dishwashers and for pest control services.
