    Refrigerators checcked at below 40 F.Noted current dates on food products checked.Quat sanitizer in two wiping cloths' buckets checked at 200 ppm concentration. One sanitzier pan checked at less than 200 ppm; sanitizer changed at this time. Sanitizer pans and buckets are tracked with timers and changed every hour.Dish machine checked at 160 F on wash cycle and 190 F on final rinse cycle.Noted ice machine interior to be clean. Noted hand sinks in prep areas and in restrooms stocked and functional.Noted some carboard on floor of commom trash enclosure for strip mall and some tree clippings behind the dumpster. Put boxes from this establishment in cardboard bin and notify property management to have enclosure cleaned of debris.Enure that floor under dry sotrage racks and refrigerators and ice machine is cleaned frequently to prevent dust build-up there.

    Trash and dirt build-up noted on floor of commonm dumpster enclosure for strip mall. Clean enclosure more frequently to keep it clean.

    OBSERVATIONS:- All temperatures observed were at or near regulation (reach-ins: freezer 8F; large cooler 41F; front counter 40F; 40F; 34F; display 40F).- Sanitizing solution tested 200ppm quat ammonia as required. Test strips were available. Dish machine observed 183F on the rinse cycle. Minimum of 180F required.- Overall facility was neat clean and well maintained. All hand sinks were stocked and operational.

Tested 200ppm quat. ammonia in the sanitizing water wipe down bucket. Observed 191F rinse temperature at the hot water sanitizing dish machine.- All hand sinks were stocked and operational.- Overall facility was clean and well organized.
