OBSERVATIONS AND RECOMMENDATIONS:- The bar was not in operation at the time of inspection as remodel work is currently being performed.- If the ice bin is to be utilized for customer ice; a covered or shielded undercounter light must be installed to supplement the typical dim lighting of the bar so that bartenders are able to see if there is any contamination in the ice. The ice bin drain line must drain by itself separate from all other equipment. Currently the bin is used only to chill drinks and not for customer ice and the drain line is manifolded in with other equipment.- When possible the wall over the floor sink that serves the drain line from the kitchen ice machine should be notched out and finished so that water is unable to infiltrate the wall and the surrounding area is easily accessed and cleanable.- There is currently no mop sink within the facility. One may be required to be installed prior to operating the kitchen.

1) Plumb the newly installed ice bin and dump sink to the floor sink. The ice bin drain line must be run indipendent of all other fixture drain lines to prevent a backflow situation.
