Floors have been sealed in customer sitting area; Behind sampling area; between brewing area; & walk in cooler area.3. Equipment moved out of facility - few more thing left will be moved. 4. Shelving painted & sealed w/ polyurethane. 5. Walk in cooler waiting to be demolished & Girl farm will be picking up cooler to move out of facility - floor will need to be sealed. 6. Organize & straighten up brewery. Correct by 2/23/16 -inspection follow up

Follow up: -CFPM requirements have been met all information listed above. -Large walk in cooler has been taken down and stored in back corner. All floors have been sealed. Large walk in cooler going to be removed out of facility - up for sale. -Bar permit will be closed to history - owner stated he would like to close permit. In the future move handsink to in line of sight and will need a new bar permit. All corrections have been completed. Under the Rose has improved and made a great effort to bring up the facility up to compliance. Routine inspection will be later this year. Let inspector know if there are any changes.

Floors in manufacturing and service area are not sealed as required. All floor surfaces must be ground down or smoothed so that they are free of rough edges. All areas that are pitted must be filled so they are smooth. All floor surfaces are requried to be sealed so that they are smooth; cleanable; and durable surfaces. See compliance guidelines below for corrections.

Surfaces are not constructed as required. Rear walk in was observed with holes; rust; and non-smooth surfaces. All holes; rust; spray foam; and all surfaces are required to be smooth; sealed; cleanable; and durable surfaces. Ceiling in 3-compartment wash sink area was observed peeling where there was a previous water leak. The ceiling is required to be repaired. See compliance guidelines below for corrections.

Must organize and keep all materials intended for the manufacturing and production of product stored as required and maintained. Observed mouse trap; skate board; shoes; and other items not associated with the manufacturing process were stored in and among the product for brewing. All items not part of the brewing process or non-food items are required to be stored away from all product. See compliance guidelines below for corrections.

3-compartment sink and hand wash sink has been corrected.The following items must be addressed according to the below time frame:Within 2-weeks or by 1-11-15 the following must be completed:Seal all floors; from the 3-compartment wash room to the front of the building; all bare wood surfaces in bar area; walls; shelves; and tables must be sanded and sealed. Must organize the 3-compartment sink room so that it is clean and ready for the wash; rinse; sanitize process as part of the bar.Within 30 days or by 1-31-2015 the rear portion and manufacturing areas must be sealed and all bare wood shelving and surfaces must be sealed. All equipment must be removed that is not actively part of the manufacturing process; and all storage must be cleaned up and organized. Rear walk in unit must be cleaned and all non-food items must be removed.-1-31-2015 must provide a plan for the rear walk-in unit to meet all the current requirements.By 12-30-2015 submit for a bar permit to operate the bar with the Washoe County Health District.1-16-2015 plans must be provided as previously required; for the current construction; hand sink for the bar; floor sink; and the bar walk-in unit.1-11-2015 must obtain and maintain a Certified Food Protection Manager certification. These are available online and are required as part of the manufacturing process.All floors in the manufacturing area are required to be cleaned and maintained on a routine basis. All manufacturing area flooring and any flooring where product storage will be maintained are required to be sealed.

As observed; all thermometers must be accurate and in use for all walk in refers. Must repair and/or replace the thermometer in the large walk in.

As observed; the 3 compartment sink is currently leaking and running on floor. Must immediately repair sink so that it is no longer leaking and avialable for use.Cannot store or leave items in the sink. The sink is to be available for use as a dishwashing facility at all times.

As observed; the existing bar is constructed with bare wood that is not sealed. There has been additional construction that includes a new tap fridge/walk in that does not meet the current requirements.As observed all of the existing service tables are not sealed and must be completely sealed to be in use.All surfaces must be smooth and easily cleanable.
