Observation:MEAT DEPARTMENT: Grinder for meat was used and not cleaned in a frequency of 4 hours. Cleaning logs indicated last time cleaned of 5 hours. Equipment was not used in between. PIC will clean the grinder ASAP.
- Shellstock, maintaining identification
Observation:MEAT DEPARTMENT: Shell stock (oysters) tags not marked with the last date Shell stock from the container is sold. Oysters tags not kept in a chronological order correlated to the date that is recorded on the tag or label. Inspector explained the record keeping to the manager today. Corrections will be made on the available tags. inspector will recheck at the next regular inspection.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation:BAKERY: Real butter on the counter @57. Butter has been out of temperature control for an extended period of time, establishment does not have procedures for time control. Item discarded by the PIC.
- Raw animal foods separated from each other during storage, separation, holding, and display
Observation:KITCHEN DEPARTMENT: Walk in cooler, raw chicken above raw meatloaf and bacon. Re-arrange to correct. Recheck at the next inspection
