    Observation: Must caulk the wall behind the following sinks: 1) new hand sink next to dish machine 2) three compartment sink 3) food prep sink. Corrected at time of inspection

    Observation: 1) Dust is accumulated on ceiling in kitchen. 2) Vent filters on reach-in freezers have dust build-up as well. Clean and maintain cleaning at frequency to prevent future issues

  • Food storage - preventing contamination from the premises
    Shelving with 2 liters is not 6" off the floor. All food and food items must be stored a minimum of 6" off the floor to aid in cleaning. Move bottom shelve up.
  • Cleanability of floors, walls, and ceilings
    1) Ceiling has a hole from water damage. Repair as needed. Cauking at hand sink and wall juncture by dish machine must be redone. 2) Cove base under dish machine is falling off. Replace.
  • Heating, ventilating, and air conditioning systems design, installation, and cleaning
    1) Grease build up in pizza oven hood. 2) Vents on reach-in freezers and make table has dust build-up. Clean areas and maintain cleaning at frequency to prevent future build up.
  • Sanitization of food contact surfaces - before use and after cleaning
    Unable to detect chlorine sanitizer in dish machine. Chlorine must be maintained between 50-100 ppm for proper sanitization. New bucket was put on and machine was primed. CORRECTED.
  • Common name-working containers
    Sidewalk salt was in bucket labeled sanitizer. All chemicals must be labeled with common name of product when removed from orginal container. CORRECTED.
