Observed no labeleing or date marking system for food in meat walk in fridge. Ensure all opened; cooked or prepped food is labeled and date marked with use by date to ensure proper rotation of food.

Observed ice paddles being stored on top of unit where it can not be cleaned routinely. Store these paddles on hooks on wall or in a separate container that can be washed and sanitized.

Observed gaskets to access hatches on ice machines severly deteriorated. Replace these gaskets to prevent cross contamination of ice.

Observed large opening in ceiling above dishwasher and an access hatch that was left open after a recent repair. Ensure hatch is kept closed except when being used and repair hole in drywall so it's smooth and easily cleanable. Once repairs are complete all dishes below this area must be rewashed to prevent any cross contamination.

Hand sinks clean and stocked. Restrooms clean and stocked. Dairy walk in @ 38F. All food at 41F and below. Good storage throughout. Meat walk in @ 39F. All food at 41F and below. Product walk in @ 36F. High temp dishwashers @ 180F and 210F. No additional CFPM's. No fails. Provided handwashing signs and other printed signs. Discussed no bare hand contact with ready to eat food.
