General Comments that relate to this Inspection Observed fully cooked meat products being kept unpackaged in refrigerated meat case. Owner plans to have a HACCP plan developed by processing authority by end of January 2016. Owner will submit HACCP plan to WCHD for review and approval before doing ROP process of fully cooked meat products.Observed shellstock tags being kept with oysters; mussels and clams until product is sold and kept on file for 90 day or more after.There are two CFPMs employed in this facility. The new CFPM passed exam on fisrt attempt in november 2015.

ALL PRODUCT WAS REMOVED FROM SALE WHILE ON SITE.HANDSINKS AVAILABLE AND PROPERLY STOCKED.PROVIDED HANDWASHING SIGNAGE.ALL COLD HOLDING TEMPS GOOD - ALL BELOW 41F.FREEZER TEMPS GOOD.ALL PRODUCT PROPERLY STORED.3-COMP SINK GOOD @ 200PPM QUAT.NO PEST CONTROL ISSUES.NO EMPLOYEE HEALTH ISSUES.DISCUSSED PLACING USE BY DATES ON PACKAGED ITEMS TO ENSURE THAT STAFF AND CUSTOMERS ARE AWARE OF EXPIRATION DATE.DISCUSSED NEW FOOD REGULATIONS.DISCUSSED NO BARE HAND CONTACT WITH READY TO EAT FOODS.FACILITY ONLY HAS 1 CFPM AT THIS TIME BUT IS HAVING ADDITIONAL STAFF BECOME CERTIFIED.FACILITY HAS NOT HAD ANYONE FAIL CFPM TEST WITHIN THE LAST YEAR.

General Comments that relate to this Inspection The items noted on the inspection conducted on 7/9/2015 have been corrected.Ok to issue permit to operate.Walk-in cooler at 34 F.Walk-in freezer at 0 F.All refrrigerated cases at below 41 F.Quat sanitzer checvked at 300 ppm concentration in 3-compartment sink.Top of walk-in cooler wil be sealed to ceiling with set back to leave wall mounted fire detector exposed.Space above walk-in freezer will be used for storage of boxed products; top will be routinely cleaned.Smoker will be used for smoking of sausages and hot dogs to sell in prepackaged form. Vacuum packing machine povided for packaging of uncooked meat products.Risk category 3 assinged. CFPM is on staff all hours of operations.Plans to ooen 7/17/2015
