Spoke with maintenance person; who stated the tube for the sanitizer is cracked. This machine just got out of warranty; so parts will be ordered. Dish machine has been unplugged. Facility will continue to use dishwasher in warehouse. Do place sign on dish machine stating it is out of order.

General Comments that relate to this Inspection Notes:Bar not in operation at time of inspection.-speed guns clean-food/dishes properly stored-chemicals labeled and properly stored-no PHF -facility is clean -ice machine clean; scoop stored properly-regular pest control by Orkin; no pest issues noted at time of inspection-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized 0ppm chlorine residual tested in the dish machine. Operator to bus dirty dishes to an alternate location until the machine has been repaired and is has a residual between 50-100ppm chlorine on the rinse cycle. Alternatively the operator my opt to use disposable service until repaired.
General Comments that relate to this Inspection OBSERVATIONS:- Ensure that Ice scoops and clean utensils and glassware/plasticware is stored properly (i.e. handles and stems up).- Areas observed were generally clean.- Ensure that bleach based sanitizer buckets are made up and maintained between 50-100ppm. Observed 200ppm.- Hand washing sinks were stocked and operational.- Continue to ensure that glass is not being allowed or transported across the pool deck.
General Comments that relate to this Inspection Violations noted on the previous inspection (dated 11-21-14) have been corrected. Dish machine tested 200ppm residual chlorine. Adjust and maintain between 50-100ppm. Too much chemical may leave a redisue on the glassware and is hard on the operator's hands without any added sanitizing benefit.
