    Observed box of lemons in walk in with beer kegs with visible mold on lemons. Items voluntarily discarded. Due to infrequent use of bar area; only stock perishable items as they are needed.Observed reach in refrigerator dripping liquid onto open juice containers; cut lemon; cherries and other garnishes. Item must be protected from all sources of contamination. Items voluntarily discarded.Corrected on site.

    Per operator; ice cambros are cleaned with soap and water after use but no sanitization step is performed. Observed water sitting in bottom of empty cambro. Ensure after cleaning that all water is drained from units; and units are appropriately sanitized and allowed to air dry.Discussed proper cleaning and sanitizing procedures.Provide sanitizer and appropriate test strips for use in this area.

Items used are carried to different locations within the casino as needed.-handwashing sink stocked-discussed handwashing procedures -dishes are done in either the banquet kitchen or buffet kitchen-all dishes and single service items properly stored-2 door reach in at 39F; walk in at 36F-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

All fan units clean. 3 compartment sink operational and no leaks.Counters & floors clean.Handsinks stocked properly w/ soap and p-towels.Dry storage clean and all products stored off ground. **Ceiling has been repaired. No sign of water damage. **Dry storage room walls have been cleaned and painted. **Light working properly.

Correct by 3/30/11.**Walk in cooler all walls and fan guards in need of cleaning. Correct by 3/30/11.

    Ceiling in need of repair in dry storage room. To the right of the crawl space by the camera ceiling has water damage from possible water leak. Ceiling has been repaired but possibly shows more water damage. Repair ceiling by 4/5/11. Back dry storage room wall have drink stains and exposed sheet rock in areas throughout back room. All walls must be repainted and cleaned. Surfaces must be smooth; sealed; and easily cleanable. Correct 4/8/11.Observed in Silver room ceiling paint peeling - Repaint ceiling to make surfaces smooth; sealed; and durable. Correct by 4/5/11.
