Store all raw foods below cooked and ready to eat foods to prevent potential cross contamination.Re stock shelves so all ready to eat foods and cooked foods are stored properly and not beneath raw meat products in walk in reefer. Reviewed with operator order of raw meat storage in cold holding units.

Do keep invoices and boxes for all fish. Fish is frozen and comes from G.L. Food Wholesale Inc. No damaged food products sold at grocery store. Only prepackaged foods are allowed to be sold at store. Observed thermometers missing in the following cold holding units:1) Reach in deep freezer bunkers. Please put them in a conspicous spot of freezer. They may be velcro to top of freezer doors. 2) Reach in ice cream bunker.3) Reach in freezer next to walk in refer.* All food observed frozen.
