Observed meat debris on the meat slicer. Contact directed a staff member to clean and sanitize the slicers as this unit is used for other food items like onions and vegetables used on hamburgers which are ready to eat. Contact said it is usually the duty of the last person who used the slicer to clean and sanitize the slicer. Corrected on site.

All violations from the last inspection have been repaired. Spoke with maintenance and sous chef from the oyster bar about installing another handsink in the butcher shop. Observed scoop for small cooked/chilled shrimp on top of lid. Store ice/food scoops within separate clean container or in product with handle up to minimize hand contact with product.

Both walk-in fridges have cut tiles behind the compressors; need to repair or replace to wall and ceiling are smooth; sealed and easily cleanable.
