General Comments that relate to this Inspection Violation from the last inspection has been corrected Fridge was at 38F and all food items were covered on the top of the unit. Contact is going to have staff check the temperature of the cold holding unit every 6 hrs to determine compliance Floors have also been cleaned. Contact said they are going to have the floors pressure washed on more routine basis.

[4] Facilities to maintain product temperature The make-up table with the sliced deli meats was at 46F. Pooled eggs were at 42F and the deli meats on the top of the unit were 43-44F. All food items were removed to the walk-in fridge which was at 41F. Maintenance was called during the inspection to repair the unit. Unit must be repaired or replaced to maintain 41F. Unit cannot be used until it can maintain 41F.
